Freeze-drying
Freeze-drying is also known as lyophilization or cryodesiccation. It is a low-temperature dehydration process that involves:
- on freezing the product,
- lowering the pressure,
- and then removing the ice by sublimation.
This is in contrast to most conventional dehydration methods, which involve evaporating water using heat.
This process allows to obtain a high quality product in the freeze dryer due to the low temperature used during processing. The original shape of the product is preserved and the quality of the hydrated product is excellent. The basic applications of freeze drying include:
- biological (e.g. bacteria and yeast),
- biomedical (e.g. surgical transplants)
- food processing (e.g. coffee) and preservation.
