6-stage falling film evaporator station for apple juice processing with depectinization discharge and aroma station.
The efficiency of the evaporator station was increased by its modernization by B&P Engineering in 2013.
The cloudy juice obtained in the pressing process is led from the presses to the evaporation station, where it is subjected to preliminary concentration and dearomatization. The intermediate concentrate obtained as a result of these processes leaves the evaporation station to be subjected to enzymation and filtration. The clear intermediate concentrate is led back to the evaporation station, where its final concentration to the selected degree of concentration takes place. The obtained concentrate must be cooled.
Parameters:
– Pasteurization flow rate 26000 1/h,
– Flow on thickening 17000 1/h.
– Vacuum 160 mBar.
Use of space
Required base area: approx. 3.5 x 14.5 m.
Materials and surface quality
All surfaces in direct contact with the product, vapours or condensate are made of chromium-nickel steel of type 1.4301 or 1.4541 (CrNi V2A steel). The upper platform is made of steel, the surface is galvanised.
Flat face welds in direct contact with the product are, if available, sanded with 120 grit flap paper, fillet welds and welds visible from the outside are cleaned and pickled.
Description of the most important parts of the device
Heating/evaporating devices
These are heating devices with a falling juice layer, with longitudinally welded pipes. The welds are smoothed. The lower part of the heating devices is accessible through the filling hole. The equipment includes all the necessary nozzles and sight glasses on the product and vapor side. Support structure: the body of the heating device is placed in a steel frame and welded.
Separators / Separators
Tangential separators of conventional design.
Checkpoint
Galvanized walkway, placed on heating devices. Access to the walkway by means of a ladder (from the roof of the building), provided by the supplier. Access to the roof is required as existing.
Buffer tank
Built-in two heating units – with one float for the product and one switch to regulate the water level.
Capacitor
Designed as a flow device; with a connector for cooling water and condensate, as well as a vent.
Spiral heater
It is used to heat the product to boiling temperature using vapors. The heater is integrated directly with the heating devices. Test pressure: 25 bar.
Plate heat exchanger
It is used for:
– use of condensate heat,
– heat exchange during discharge to depectinization,
– cooling the concentrate,
– obtaining flavour etc.
1.4301 plates or better, painted steel frames.

Centrifugal pumps with mechanical seal and closing water assembly, flange motor.
Vacuum pumps
Single-stage water ring vacuum pumps made of steel
Refrigeration unit
Water-cooled compressor for cooling glycol water (with aroma extraction and concentrate cooling parameters). Drive: electric motor

The station control is equipped with recording of the most important operating parameters, in particular:
- amount of juice supplied
- boiling point
- concentrate density
- vacuum / negative pressure
- concentrate temperature
The visualization of the device's operating status and its operation are performed using a computer with an LCD monitor. The software installed on the PC allows both automatic and manual control of the device.
Scope of equipment in relation to measurement and control technology
all necessary devices for recording measurement results and signal converters, equipment for product and condensate switch-over flaps with pneumatic drives and proximity sensors, all necessary actuators, frequency converters; for control valves including position controllers to improve the quality of control, motor protection (from 7.5 kW star-delta starting), pilot valves, Siemens S7 control system (with Software PID controllers), control cabinet (sheet steel with VA base) for control recording, contactors, magnetic valves, transducers, frequency converters, etc.; type of protection IP24.
